Zesty Garlic and Herb Chicken Breast Marinade

Rate this recipe:

Built by the community using marinade for chicken breast

A bold, all-purpose marinade that works beautifully on chicken breast — bright with lemon, rich with garlic, and fragrant with dried herbs. Let it sit for at least 30 minutes or overnight for the best results. Works on the grill, in a pan, or in the oven.

Ingredients

Serves4
  • 4 tablespoons olive oil
  • 3 tablespoons lemon juice (fresh or bottled)
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried mixed herbs (oregano, thyme, basil)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 chicken breasts (approximately 600–700g total)

1. Combine the olive oil, lemon juice, minced garlic, smoked paprika, dried herbs, Dijon mustard, honey, salt, and black pepper in a bowl or jug. Whisk together until well combined and emulsified.

2. If your chicken breasts are thick, place them between two sheets of cling film or baking paper and bash gently with a rolling pin to an even thickness of about 2cm. This helps them marinate and cook more evenly.

3. Place the chicken breasts in a zip-lock bag or shallow dish. Pour the marinade over the chicken, ensuring every piece is well coated. Seal or cover and refrigerate for at least 30 minutes — or up to 24 hours for deeper flavour.

4. When ready to cook, remove the chicken from the fridge 15 minutes before cooking to take the chill off. Cook using your preferred method: grill over medium-high heat for 5–6 minutes per side, pan-fry in a hot skillet for 5–7 minutes per side over medium heat, or bake at 200°C (400°F) for 20–25 minutes until cooked through with no pink in the centre.

5. Rest the cooked chicken for 5 minutes before slicing. Spoon over any resting juices and serve.
