Ingredients

Serves4
  • 500g (1.1 lb) ground turkey
  • 1 x 400g (14 oz) tin black beans, drained and rinsed
  • 1 x 400g (14 oz) tin chopped tomatoes
  • 1 medium onion, diced
  • 1 bell pepper (any colour), diced
  • 2 medium carrots, cut into small batons
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 250ml (1 cup) chicken or vegetable stock
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried mixed herbs
  • Salt and black pepper to taste
  • 1 tbsp olive oil

1. Heat the olive oil in a large, deep pan or pot over medium-high heat. Add the onion, celery, and carrot batons. Cook for 5–6 minutes, stirring occasionally, until the onion softens and the vegetables start to colour.

2. Add the garlic, smoked paprika, cumin, and dried herbs. Stir well and cook for 1 minute until fragrant.

3. Add the ground turkey, breaking it up with a spoon. Cook for 5–6 minutes, stirring regularly, until browned all over and no pink remains.

4. Stir in the tomato paste and cook for 1 minute to caramelise slightly.

5. Add the diced bell pepper, tinned tomatoes, black beans, and stock. Stir everything together and season well with salt and black pepper.

6. Bring to a boil, then reduce the heat to low. Simmer uncovered for 20–25 minutes, stirring occasionally, until the sauce has thickened and the vegetables are tender.

7. Taste and adjust seasoning. Serve as-is, or ladle over steamed rice.

e.g. What can I swap for paprika?
