Soy & Honey Glazed Hard Boiled Quail Eggs

Ingredients
- 12 hard boiled quail eggs, peeled
- 3 tbsp soy sauce
- 1 tbsp honey
- 1 tsp white wine vinegar
- 1 clove garlic, finely minced
- 3 tbsp water
- 1 tsp sugar
- 1 tsp vegetable oil
1. Combine the soy sauce, honey, sugar, white wine vinegar, minced garlic and water in a small bowl and stir until the sugar dissolves.
2. Heat the vegetable oil in a small frying pan or saucepan over medium heat. Add the peeled quail eggs and let them sit undisturbed for about 60 seconds so they pick up a little colour on one side.
3. Pour the soy and honey mixture over the eggs. It should sizzle immediately — this is good.
4. Simmer over medium heat for 4–5 minutes, gently rolling the eggs occasionally so they coat evenly in the glaze.
5. Reduce the heat slightly and continue cooking for another 3–4 minutes until the glaze thickens and turns glossy, clinging to the eggs. Watch carefully at this stage — the honey can catch quickly.
6. Remove from the heat. Serve warm or at room temperature, spooning any remaining glaze over the eggs. Great as a snack on their own, alongside rice, or as part of a sharing plate.
