Ingredients
- 300g pasta (spaghetti, penne, or whatever you have)
- 1 x 400g tin of chopped tomatoes
- 2 x 145g tins of tuna in oil or brine, drained
- 4 cloves of garlic, thinly sliced
- 3 tbsp olive oil
- 1 tsp dried oregano or mixed herbs
- 1/2 tsp chilli flakes (optional but recommended)
- Salt and black pepper to taste
- Squeeze of lemon juice (optional, to finish)
- Small handful of fresh or dried parsley to garnish (optional)

Method
1. Bring a large pot of well-salted water to a boil. Add the pasta and cook according to packet instructions until al dente. Before draining, scoop out a mug of the starchy pasta water and set aside.
2. While the pasta cooks, heat the olive oil in a large frying pan over a medium-low heat. Add the sliced garlic and cook gently for 2-3 minutes until golden and fragrant — don't let it burn or it will turn bitter.
3. Add the tinned tomatoes, dried herbs, and chilli flakes if using. Stir well and season with salt and pepper. Let the sauce simmer for 8-10 minutes, stirring occasionally, until it thickens slightly.
4. Add the drained tuna to the sauce, breaking it up gently with a spoon. Stir to combine and cook for a further 2 minutes until the tuna is warmed through.
5. Drain the pasta and add it directly into the pan with the sauce. Toss everything together over a low heat, adding a splash of the reserved pasta water to loosen the sauce if needed — this helps it cling beautifully to the pasta.
6. Taste and adjust seasoning. Finish with a small squeeze of lemon juice to brighten the flavours. Serve immediately, garnished with parsley if you have it.
