Rich Dark Chocolate Mousse
Rate this recipe:
A classic, indulgent chocolate mousse — light and airy yet intensely chocolatey, with a silky texture that melts on the tongue. Made with just a handful of ingredients, this is the kind of dessert that feels far more impressive than the effort it takes.

Ingredients
- 200g dark chocolate (70% cocoa), broken into pieces
- 4 large eggs, separated
- 3 tbsp caster sugar (or white sugar)
- 30g unsalted butter
- Pinch of salt
1. Melt the chocolate and butter together in a heatproof bowl set over a pan of barely simmering water, making sure the bowl doesn't touch the water. Stir gently until completely smooth, then remove from the heat and leave to cool for 5 minutes.
2. Whisk the egg yolks and sugar together in a large bowl until the mixture is pale, thick, and ribbony — about 2–3 minutes by hand or 1 minute with electric beaters.
3. Gently fold the cooled melted chocolate into the egg yolk mixture until fully combined and glossy.
4. In a clean, grease-free bowl, whisk the egg whites with a pinch of salt until they hold firm, glossy peaks. Do not over-whisk — they should be stiff but not dry.
5. Add a large spoonful of the egg whites to the chocolate mixture and stir it in briskly — this loosens the mixture and makes it easier to fold. Then gently fold in the remaining egg whites in two batches, using a large metal spoon or spatula. Use a light cutting and folding motion to keep as much air in as possible.
6. Spoon or pour the mousse into 4 small glasses, ramekins, or cups. Smooth the tops gently.
7. Refrigerate for at least 2 hours, or overnight, until set and firm. Serve straight from the fridge.
