Kester's take on Smoky Mexican Chicken Marinade
Rate this recipe:
Built by the community using 3 tbsp olive oil, Juice of 1 lemon (or 2 limes if you have them), 3 cloves garlic, finely minced (or 1 tsp garlic powder), 2 tsp smoked paprika, 2 tsp ground cumin, 1 tsp dried oregano, 1 tsp salt, ½ tsp black pepper, 1 tsp sugar (brown preferred — helps caramelisation), 1 tsp hot sauce (optional but recommended), 1 tbsp tomato paste, 4 chicken pieces (thighs, breasts, or drumsticks — about 700g total)
Fresh from Kester's kitchen — inspired by Smoky Mexican Chicken Marinade. This version layers in chipotle, hot ground red pepper, and New Mexico Hatch pepper flakes for a smoky, complex heat that makes the hot sauce completely redundant — with honey stepping in to balance the fire and encourage a gorgeous caramelised char.

Ingredients
- 3 tbsp olive oil
- Juice of 1 lemon (or 2 limes if you have them)
- 3 cloves garlic, finely minced (or 1 tsp garlic powder)
- 2 tsp smoked paprika
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp honey (replaces sugar — adds sweetness and helps caramelisation)
- 1 tbsp tomato paste
- 1–2 tsp chipotle powder or finely chopped chipotle in adobo (to taste)
- ½ tsp hot ground red pepper (to taste)
- ½–1 tsp hot Hatch pepper flakes (to taste)
- 4 chicken pieces (thighs, breasts, or drumsticks — about 700g total)
1. In a bowl or jug, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, cumin, oregano, salt, pepper, honey, tomato paste, chipotle, ground red pepper, and Hatch pepper flakes until fully combined into a smooth, deep red marinade. The honey may need a brief stir to fully incorporate — warm it slightly first if it is very thick.
2. Taste the marinade carefully before it touches the chicken — the three layers of heat from the chipotle, red pepper, and Hatch flakes build on each other, so give it a moment before deciding to add more. It should be smoky, tangy, fiery, and well-seasoned. The honey should provide a subtle sweetness that rounds out the heat rather than sweetening the overall flavour. Adjust salt or acidity as needed.
3. If using chicken breasts, score them 2–3 times with a sharp knife so the marinade penetrates deeper into the meat. Thighs and drumsticks can go in as they are.
4. Add the chicken to a bowl or zip-lock bag, pour over the marinade, and turn to coat every piece thoroughly. Cover and refrigerate for at least 30 minutes — ideally 4 hours, or overnight for maximum flavour. Note that with honey in the marinade, the outside of the chicken will colour and char more quickly during cooking, so keep an eye on the heat.
5. To cook: grill or barbecue over medium to medium-high heat (slightly lower than you might usually use, to account for the honey caramelising fast) for 6–8 minutes per side until charred and cooked through. Alternatively, pan-fry in a hot oiled skillet for 5–7 minutes per side, watching for the marinade catching — a splash of water and a lid on can help if it colours too quickly. Or bake at 200°C / 400°F for 25–30 minutes until the juices run clear, checking at the 20-minute mark as the honey glaze can go from beautifully sticky to burnt fairly quickly.
6. Rest the chicken for 5 minutes before serving. Spoon any resting juices over the top as a quick drizzle — they will carry all that heat and smokiness with them.
