- Large handful of fresh mint leaves (about 20g), roughly torn
- 4 tbsp olive oil
- 2 tbsp white wine vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- 1 small garlic clove, finely grated or minced
- Pinch of salt
- Pinch of black pepper
1. Strip the mint leaves from their stems and roughly tear or chop them — you want about 3 heaped tablespoons once torn.
2. Add the mint to a small blender, food processor, or a tall jar if using a hand blender. Add the olive oil, white wine vinegar, honey, Dijon mustard, and garlic.
3. Blend until smooth and vibrantly green — about 30 seconds. Alternatively, finely chop the mint by hand and whisk everything together in a small bowl for a more rustic, textured dressing.
4. Taste and adjust: add more vinegar for sharpness, more honey for sweetness, or a little more salt to bring the flavours together.
5. Transfer to a jar or small bottle. Use immediately or store in the fridge for up to 3 days. Shake or stir well before each use as it will settle.
