Ingredients
- 6 medium eating or cooking apples (about 900g), peeled, cored and sliced
- 3 tbsp caster or white sugar (for the filling)
- 1 tsp ground cinnamon
- 1 tbsp lemon juice
- 180g plain flour
- 120g cold butter, cubed
- 80g rolled oats
- 100g sugar (brown sugar works best for the topping)
- Pinch of salt
1. Preheat your oven to 190°C (375°F).
2. Peel, core and slice the apples into roughly 1cm-thick pieces. Toss them in a baking dish with the 3 tbsp sugar, cinnamon and lemon juice. Spread them out in an even layer.
3. In a large bowl, combine the flour, oats, 100g sugar and a pinch of salt. Add the cold cubed butter.
4. Rub the butter into the dry ingredients using your fingertips, pressing and squeezing until the mixture resembles rough, clumpy breadcrumbs — you want some larger lumps, not fine sand. This is what gives you a great crumble texture. Don't overwork it.
5. Scatter the crumble topping evenly over the apples, covering them fully but not packing it down.
6. Bake for 35–40 minutes, until the topping is deep golden brown and the apple juices are bubbling up around the edges.
7. Remove from the oven and leave to stand for 5 minutes before serving. Spoon into bowls and serve with custard, double cream, or vanilla ice cream.
