  • 150g rolled oats
  • 75g plain flour
  • 100g butter, softened
  • 100g brown sugar
  • 1 egg
  • 1 tsp vanilla extract (optional but recommended)
  • ½ tsp salt
  • ½ tsp baking powder (use bicarbonate of soda if that's what you have)

1. Preheat your oven to 180°C / 350°F. Line a baking tray with parchment paper or lightly grease it with butter.

2. In a large bowl, beat the softened butter and brown sugar together until pale and creamy — a wooden spoon works fine, or use an electric hand mixer if you have one.

3. Add the egg and vanilla extract (if using) and beat again until fully combined.

4. Add the flour, oats, salt, and baking powder. Mix until a thick, slightly sticky dough forms.

5. Roll the dough into balls roughly the size of a golf ball and place them on the tray, leaving about 5cm between each one. Flatten them slightly with the palm of your hand — they won't spread much.

6. Bake for 12–15 minutes until the edges are golden brown. The centres will look slightly underdone — that's perfect. They firm up as they cool.

7. Leave the cookies on the tray for 5 minutes before transferring to a wire rack. Try to resist eating them immediately (you probably won't manage it).
