Ingredients

Serves2
  • 2 basa fillets (frozen, defrosted)
  • 1 tin (400g) chopped tomatoes
  • 1 medium onion, finely sliced
  • 3 cloves garlic, thinly sliced
  • Small handful of fresh herbs (parsley, basil or thyme — or a mix), roughly chopped
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • Salt and black pepper
  • Squeeze of lemon juice

1. Pat the defrosted basa fillets dry with kitchen paper. Season both sides generously with salt, pepper and a squeeze of lemon juice. Set aside.

2. Heat the olive oil in a wide, lidded frying pan over medium heat. Add the onion and a pinch of salt. Cook for 6–8 minutes, stirring occasionally, until softened and just starting to turn golden.

3. Add the garlic and tomato paste and stir everything together. Cook for 1–2 minutes until the paste darkens slightly and smells fragrant.

4. Pour in the tinned tomatoes. Season with salt and pepper, stir well and bring to a gentle simmer. Cook uncovered for 5 minutes to let the sauce reduce and concentrate slightly.

5. Nestle the seasoned basa fillets into the sauce. Spoon a little sauce over the top of each fillet. Cover with a lid and cook over a low-medium heat for 8–10 minutes, until the fish is opaque and flakes easily when pressed.

6. Scatter over the fresh herbs and taste the sauce — adjust seasoning and add another squeeze of lemon if needed. Serve straight from the pan with crusty bread, rice or pasta.
