Ingredients

Serves2
  • 2 frozen basa fillets, fully thawed and patted dry
  • 2 tbsp olive oil
  • 3 cloves garlic, finely minced
  • 1 tsp smoked paprika
  • 1 tsp dried mixed herbs (oregano, thyme, basil)
  • Juice of half a lemon
  • Salt and black pepper to taste
  • 1 tbsp butter, cut into small cubes (for topping)

1. Thaw your basa fillets fully — either overnight in the fridge or submerged in cold water for 30–45 minutes. Once thawed, pat them very dry with kitchen paper. This is important: moisture is the enemy of a good bake.

2. Preheat your oven to 200°C (400°F). Line a baking tray with foil or baking paper and lightly grease it with a little oil.

3. In a small bowl, mix together the olive oil, minced garlic, smoked paprika, dried herbs, lemon juice, a generous pinch of salt and a good crack of black pepper.

4. Lay the basa fillets on the prepared tray. Spoon and brush the herb-garlic mixture evenly over both fillets, making sure they are well coated on top.

5. Dot the small cubes of butter over the top of each fillet — this bastes the fish as it bakes and adds richness.

6. Bake in the preheated oven for 15–18 minutes, depending on the thickness of your fillets. The fish is done when it flakes easily when pressed gently with a fork and is opaque all the way through.

7. Remove from the oven, squeeze over a little extra lemon juice if you like, and serve immediately. Goes beautifully with rice, pasta, or a simple green salad.
