How to Save a Dish That's Gone Wrong
Too salty, too bland, too spicy, burnt — how to rescue common cooking disasters.
Everyone makes mistakes. The difference between a good and great cook is knowing how to fix things when they go wrong.
Too Salty
Add more unsalted liquid to dilute. Or balance with acid (lemon) or sweetness (sugar).
Too Spicy
Add dairy (cream, yogurt, coconut milk) or sweetness. Serve with rice or bread.
Too Bland
Needs salt? Add salt. One-dimensional? Add acid. Harsh? Add fat.
Too Acidic
Balance with a pinch of sugar or honey. Fat also mellows acidity.
Burnt on the Bottom
Stop stirring. Transfer unburnt food to a clean pot. Don't scrape.
Overcooked Vegetables
Blend into soup, mash into puree, mix into frittata, or fold into pasta.
Sauce Too Thin
Simmer uncovered to reduce. Or whisk in a cornstarch slurry.
Sauce Too Thick
Add stock, water, cream, or wine in small amounts until right consistency.
